This is a book at the Lippincott reference desk. It is very detailed and a much appreciated resource.

Multi-volume. With this one, you should search on several different terms
(sandwich shop, cafe, bakery, diner, restaurant, etc)
And you have to scroll down past the ads selling business plans that precede every entry.
Note that many of the plans are dated in the 90's. A more up-to-date print version of this resource is at the Lippincott reference desk.
